
Made some date syrup vanilla fluff today! I modified this recipe:

I used 3 egg whites, 1/4 tsp cream of tartar
3/4 cup date syrup
1/4 cup water
I cooked the date syrup water while stirring until it got above 220, but it seemed ready before hitting 240, so I removed it around 225.
I added some vanilla extract and a sprinkle of sea salt. Now it’s time to make cookies so we can fill them with this goodness, and we will take a little to the beach for fluffernutter sandwiches on fresh milled bread. ![]()
Does this taste like fluff?
It's fluffy like fluff, but due to the carmelized flavor of date syrup, it has a more complex flavor. It's a wonderful one - but this doesn't taste just like fluffy sugar. It's better!
Can I use honey?
Sure! You can use honey, maple syrup, or a mixture of sugar and water if you like. But you'll definitely need to get the mixture to the soft ball stage before moving on.
