
I don't know about you, but sometimes the idea of measuring all the ingredients to make pancakes or waffles SEEMS like a lot. Too much! I know, I'm kinda lazy at times. So, how do we make a pancake or waffle mix ahead of time, so we can just measure it and add the water/milk and eggs and go? EASY! Stick with me here.
The Base
The Changes
First of all, we are going to scale this up times six so we don't have to make this mix again and we could have pancakes or waffles almost daily if we want, or double batches every other day during the week with leftovers on alternate days.
Second, we are only going to measure the dry ingredients, so they can be bagged up and kept on the shelf for the next week or two. I wouldn't keep it longer than that, although I admit I've used waffle mix that's a month old before and they turned out fine. The outcome of the baked goods, however, is not the problem with milling flour ahead. It's rancidity of those essential fatty acids - so we don't want them to turn rancid and cause problems in our bodies. So don't mill too big of a batch, okay?
The Final Base
- 750 g soft wheat (white or red) - spelt, barley or rye could also be used. I love a combo.
- 60 g baking powder
- 6 g sea salt
- 144 g sugar (optional, I don't add it to mine)
- 6 freeze dried eggs, powdered (if you have access to them) or 6 tbsp ground flax seeds
Instructions
- Mill the flour as fine as you can.
- Add the remaining ingredients to the mixing bowl.
- Mix well with a whisk so the ingredients are equally distributed.
- Store in a bag or canister in your pantry.
To Make Waffles
For every cup of dry mix, add a cup of milk or water.
Add 2 eggs per cup of flour if you did not add freeze dried eggs to the dry mix.
To Make Waffles
For every cup of dry mix, add a cup of milk or water and1 tsp of apple cider vinegar or citrus juice.
Add 2 eggs if your mix doesn't contain them already.
Make it Vegan
You can replace each egg with 1 tbsp of ground flax seeds. Use vegan milk to replace milk, such as soy, coconut, oat, or nut milk. Easy peasy!
