Tortillas for Quick Wins
I’ve been feeling a little lazy lately, and we have resorted to tortillas to provide lunch and dinner while saving money. Things have been a little tight these last few months, so turning leftovers into new meals is even more important.

These are so quick and easy to make I can get them all done, milling and figuring out how to hold the camera (sort of) at the same time. They are super soft, flexible and cook up in no time.
The Base

The Changes
We needed to increase the liquid to account for the higher absorption rate of Guardian Grains Spelt. I also added a little lemon juice to help with the flexibility on day two, and these are ready to go.
Ingredients
350 grams guardian grains Spelt
6 g sea salt
6 g baking powder (optional)
260 g very hot (but not boiling water)
30 g extra virgin olive oil (or other fat of your choice)
7 g lemon juice (no they won’t taste like lemon)
Directions
Start your kettle, then mill the flour.
Place the flour into your mixing bowl.
Stir the sea salt and baking powder into the flour.
Pour very hot but not boiling water into the flour, followed by the fat.
Knead the dough with dough hook and mixer for a minute or two, or knead for a few minutes by hand. You can skip kneading and let the dough rest longer, but it’s better kneaded a little.
Preheat griddle to 450 F (medium high heat).
Rest the dough (10-15 minutes, 30 if hand kneaded).
Divide the dough into 8 equal portions.
Shape each portion into a round, and roll out to about 8” diameter rounds.
Separate each round with parchment paper so they don’t stick together.
Place the rounds on the griddle, peel back the parchement, and cook for about 20 seconds, flip for about 3-5 seconds, and then flip back. If you want an extra flip, go for it. Each one is cooked for about 30 seconds total. Do not overcook them or they will not be flexible.
Remove from the griddle and let sit on a plate covered with a towel to keep the steam in.
If storing overnight, top the towel with a shower cap or something to keep the air from drying them out.
